Sea truffles are among the most popular molluscs, for their delicate flavour and tasty flesh. They are usually eaten raw, with a bit of lemon, like oysters. They look and taste a bit like clams, which they are different from because their shell has a rough texture (while clams have a smooth shell) and their taste stronger and more persistent. Sauté in the pan, over high heat, sea truffles can make a unique appetizer, or they can simply be used to make seafood sauces, depending on the chef’s inspiration.
